minutesThe Andalusian Gazpacho is one of the most popular dishes in the Spanish cuisine. It is incredibly simple and quick to prepare and served in almost all regions of Spain. Due to the very refreshing taste, it is popular especially throughout the summer as an appetizer during the day.
Ingredients
7 tomatoes
1 green bell pepper (medium)
¼ red bell pepper
1 small onion
1 garlic
1 cucumber
245 ml of water
15 ml apple vinegar
35 ml of olive oil
Salt
Garnish: 2 cucumbers
Preparation
- Add all the ingredients in the recipe with the exception of the cucumber into a blender and blend until smooth.
- Cut the 2 cucumbers into small cubes and add them to the container. You can also serve it in a separate dish next to the Gazpacho and serve the desired amount.
- Let it rest in the fridge for at least 2 hours to cool down well. Cover it (it can be with film or a lid) so that it does not oxidize or lose its vitamins.
